BOERO WITHOUT STONE and 70% dark chocolate
In June we select, clean and put into a blend of grappa and alcohol the cherries from Vignola and from Bella di Garbagna (this latter slow food presidium).
Early in September, the production starts: from time to time the cherries are dried for the daily production. The dried cherries are then immersed by hands in fondant sugar cane and placed on special frames as to make the sugar solidify; after the cherries are coated with several chocolate layers and then they are grilled in order to give them the typical waves on the top Therefore we create a chocolate “dress” which fits every single cherry perfectly, that’s why boero has different weight and shape. In the following phase the sugar starts the natural process by which little by little it extracts from the cherry the alcohol and melts. This process goes on till sugar completely melts and the cherry has given out all its alcohol. This is how the delicious liqueur is made inside. So in the craftmade “ boero” the ripe cherry has little pulp and much liqueur.
Covering : dark chocolate (cocoa: 60% min) (cocoa mass, sugar, cocoa butter, emulsifier: SOY lecithin and sunflower, natural vanilla flavor). Filling: cherry without stone in a mixture of alcohol and grappa, sugar, rice starch.
