This Valpolicella is the result of a rigorous selection of the bunches
of Corvina, Corvinone, Rondinella, Croatina, Oseleta. The grapes
they are collected in plateaux and placed in the fruit tree for about a month.
During this short period thanks to the microclimate of the valley
the grapes undergo a slight dehydration at the end of October the grapes
it is crushed and left to ferment in contact with the skins for
about 20 days.
After the racking, the wine enters the barrique and comes
left to mature for 24 months. After this period the wine
it is bottled and left to rest for a further six months
before being put on the market.
