Vinification: A rigorous selection identify the best bunches and are stored in fruttaio (Dryining room) for about 20 days. After a cold maceration of 15 days, the slow fermentation lasting at least a month takes place in stainless steel tanks with controlled temperatures never exceeding 20°C. The soft remontage and delestage technique allows the maximum extraction of polyphenolic compounds. Aging|The wine is refined in 5 to 30 hl French oak barrels for at least 3 years and will rest an extra few months in stainless steel tanks. Released after an extra 6 months in bottle.
Food pairings: wine of great structure, it will be ideal to red meat and game dishes. Recommended with Hard-cheeses and the veronese cuisine, risottos, stews.

Colour: Red ruby colour with purple tints.
Bouquet: Elegant and complex nose, floral notes and wood berries evolving to eucalyptus and smoky with a touch of balsamic.
Palate: Soft and well balanced, fruity sensation of cherry and raspberry combined with subtle vanilla. Dynamic, persistent and elegant finale.

Piccoli: Nature and Passion...to excite
Azienda Piccoli, is located on Monte La Parte, a beautiful hill of tuffaceous and calcareous soils in Parona di Valpolicella, a few minutes from the historic center of Verona. It was born as a meeting place between art and nature, with the philosophy of telling the hilly territory to which it belongs, as an interpretation and expression of Valpolicella. Is spread over 15 hectars dedicated entirely to the cultivation of grapes and olives. The vineyards pruning systems are guyot and pergola veronese.
The vines are at 260 meters above sea level and, due to windy climate and excellent sun exposure, produce high quality grapes devoted to make structured, complex, elegant and fruity wines. An excellent production of about 40.000 bottles in total, that wants to emerge for the high quality, the result of tradition and innovation. The common target of all the wines is the research of the best grapes to get, in every sip, the landscape of origin and the most beautiful emotion.
