Grape varieties: Corvina, Corvinone, Rondinella, Oseleta, Molinara and Croatina, only own grapes, hand selected from Cru Monte La Parte.

Service temperature: 18-20°C
Vinification: A rigorous selection identify the best bunches and are stored in fruttaio (Dryining room). The drying process, all natural without the use of air conditioning system, lasts longer than 3 months with a weight loss of up to 35%. After a cold maceration of 15 days, the slow fermentation lasting at least a month takes place in stainless steel thanks with controlled temperatures never exceeding 20°C. The soft remontage and delestage tecnique allows the maximum extracion of polyphenolic compounds. Aging| The wine is refined in 30 hl French oak barrels for at least 5 years. After this, the wine is transferred to stainless steel tanks for an extra few month before bottling. Spend and extra year in bottle before being released.
Food pairings: Wine of great structure, it will be a good combination with red meat and game dishes. Excellent with Salame or matured or semi-matured cheeses.
Wine tasting
Colour: Red ruby colour with shades of orange.
Bouquet: Nose reveals notes of ripe fruit such as black cherry, raspberry and plum with hints of mint and eucalyptus.
Palate: Full bodied, well structured with elegant tannins, fruity notes of red berries combined with liquorice and tobacco. Dense, complex and an ever persistent after taste.
