Vinification: The Ripasso is elaborated using conventional technique, which consists of bringing the grapes of Valpolicella wines in contact with the grape skins of Amarone. This is where the term “pass” comes from. This process lasts between ten to twenty days during which it allows the transfer of sugar, colour, polyphenolic substances and softness. Daily “remontage” is carried out and the fermentation temperatures never exceed 20°C.
Aging:The wine is refined in 3,5 to 5hl French oak for at least 2 years before bottle. Released after 6 months in bottle.
Food pairings:Wine of medium structure, it will be ideal the whole meal because of its freshness. It could accompany risotto, medium aged cheeses or savoury dishes.
Wine tasting
Colour: Intense ruby red colour with purple reflections.
Bouquet: Very floral with red berries such as raspberry and blackberry.
Palate: Elegant, smooth and very fruity. Well-balanced with spicy touch. Soft tannins with plenty of freshness. Long after taste.

Piccoli: Nature and Passion...to excite
Azienda Piccoli, is located on Monte La Parte, a beautiful hill of tuffaceous and calcareous soils in Parona di Valpolicella, a few minutes from the historic center of Verona. It was born as a meeting place between art and nature, with the philosophy of telling the hilly territory to which it belongs, as an interpretation and expression of Valpolicella. Is spread over 15 hectars dedicated entirely to the cultivation of grapes and olives. The vineyards pruning systems are guyot and pergola veronese.
The vines are at 260 meters above sea level and, due to windy climate and excellent sun exposure, produce high quality grapes devoted to make structured, complex, elegant and fruity wines. An excellent production of about 40.000 bottles in total, that wants to emerge for the high quality, the result of tradition and innovation. The common target of all the wines is the research of the best grapes to get, in every sip, the landscape of origin and the most beautiful emotion.
